Healthy Dinner Recipes:

It’s easy to fall into the trap of eating the same dinners on rotation. Not only does this get a tad boring, it also reduces your pool of nutrients. Here are some nutritious and delicious ideas to try… (All of the following recipes serve 2 peopls)

Salmon and Coconut Stir Fry –

Pour a can of coconut milk (full fat) into a saucepan, with 4 tablespoons of brown rice or barley. Add 2 tsp of vegetable stock or Bouillon and stir – bring to boil then simmer for ½ an hour or until the grains are cooked. Meanwhile, bake a couple of pieces of salmon fillets, wrapped in foil. While they are baking in the oven, grab yourself a wok and pour in some olive oil. Add 8 chopped cherry tomatoes and 2 crushed cloves of garlic – heat and stir, allowing the flavours to infuse. Keep stirring the coconut milk concoction as you go along, ensuring that the rice doesn’t stick to the bottom of the pan. Turn your attention back to the wok – add in a packet of stir fry vegetables and stir with the tomatoes and garlic. Then add ½ tsp of ground turmeric. Once the rice is cooked in the coconut milk, pour the mixture into the wok of vegetables. Then add a handful of spinach, stir in and serve alongside the baked salmon fillet. You may wish to add a squeeze of lime on top of the fish.

Turkey & Rice noodles –

Cut 2 turkey steaks into strips, and cook on a low heat in a pan – once cooked put aside. Next take a wok and add some oil, alongside 2 carrots cut into long strips, 3 chopped spring onions, and 1 red chopped red pepper. Heat until tender and then add in the cooked turkey and 2 handfuls of rice noodles. Stir for a few minutes, and then add 2 handfuls of spinach. Once the whole lot is cooked to your taste and ready to serve you need to dress it. Add in 2 spoonfuls of honey, 2 spoonfuls of soy sauce and the juice of 2 limes. You may wish to add a little more honey or soy sauce to your taste. Scatter some fresh coriander on top and sprinkle some nuts or seeds to finish, such as sesame, sunflower or pumpkin seeds or even some cashews.

Feta stuffed Chicken wrapped in prosciutto –

Stuff cubes of feta cheese and diced red onion inside fresh chicken breasts. Wrap with a layer of prosciutto, and bake in the oven for half an hour or so. Meanwhile boil a small sweet potato and once soft, mash with a little butter. Take a large handful of watercress and tear into small pieces. Scatter into the mash and stir until mixed well. Once the chicken is cooked through thoroughly serve with the sweet potato mix and whichever additional vegetables you fancy. Leek, peppers, broccoli, grilled tomatoes and cauliflower go well.
